Cucumber Onion and Pickle Sandwiches

From The Modern Family Cookbook

1 small cucumber
1 small onion
1/4 cup chopped sweet pickles
1/4 cup mayonnaise
10 slices buttered bread

Pare cucumber and peel onion, and chop them together with the pickles. Mix with mayonnaise and spread on half the slices of buttered bread; top with remaining slices. Good with salmon or tuna salad. Enough for 5 sandwiches.

My notes: These retro folk had a way with veggie sandwiches. No boring green pepper, onion, sprout and cheddar in this cookbook! I do hope the kidney bean sandwiches get featured soon or the carrot butter ones! Awww…maybe if you ask nice I will post them without waiting to work them into the menus.

  1. No, thanks. I don’t think the kidney bean sandwiches or carrot butter ones sound good. Though maybe Michelle would since she was happy with those baked bean sandwiches she made.

    This one, I like. I don’t think it needs salmon or tuna though.
