Swiss Steak

2 lbs. round steak
â…“ cup flour
1 teaspoon salt
Dash pepper
3 tablespoons shortening
2 cups water or 1 No. 2 can tomato juice

Wipe steak thoroughly with clean damp cloth. Mix flour with salt and pepper and pound into steak with edge of heavy saucer. Melt shortening in skillet and brown steak well on both sides. Then pour in the water or tomato juice, cover tightly and bake in a slow oven (300° F.) about 1½ hours or until very tender. If preferred, cooking may be finished on top of the stove over low heat rather than in the oven. Serve with the gravy. 5 or 6 servings.

Variation: Spanish Steak. Instead of the water or tomato juice, add to the browned steak 1 No. 2 can tomatoes, ½ cup sliced celery, 2 tablespoons sliced onion, 2 tablespoons chopped green pepper. Finish cooking in the same manner as for Swiss Steak.

My notes: Unfortunately, this failed to be a hit in my house. Kids today!
