Mashed Potatoes

From The Modern Family Cookbook6 medium-size potatoes
2 tablespoons butter
about ½ cup hot milk
Salt to taste

Wash and pare potatoes thinly and cook as directed for Boiled Potatoes, until soft when pierced with a fork. Drain thoroughly, saving the water. Mash potatoes thoroughly or put them through a ricer which has been heated by running hot water through it. Add butter and hot milk and beat vigorously over low heat, using a fork or wooden spoon, until very light, fluffy and white. Beat in salt to suit taste. Pile into a hot serving dish, leaving surface fluffy, then top with a pat of butter and a dash of paprika. Serve immediately. 5 servings.

Water drained from potatoes should not be discarded, as it contains valuable minerals. Use it for making gravy or vegetable soup.
