Wilted Lettuce

From The Modern Family Cookbook

1 lb. leaf lettuce or 1 head lettuce
8 or 10 radishes (may be omitted)
2 tablespoons bacon fat
1/2 teaspoon salt
1 teaspoon sugar
1 tablespoon vinegar

Separate lettuce leaves and wash thoroughly; drain well, then lay in a folded towel and shake off as much water as possible. Tear leaves into 3 or 4 pieces. Wash radishes and slice over lettuce in a salad bowl. Heat bacon fat with salt, sugar, and vinegar until mixture sizzles. Pour over lettuce and radishes and toss together until thoroughly combined. Serve immediately while warm. 5 servings.
