Pork Chop Suey

1 lb. lean pork
1 tablespoon bacon or pork fat
2 cups diced celery
3 medium onions, sliced
¾ teaspoon salt
1 cup boiling water
1 tablespoon molasses
1 tablespoon soy sauce
1½ tablespoons corn starch
1 No. 2 can assorted chop suey vegetables
3 cups cooked rice

Cut pork into thin strips and saute 5 minutes (not until browned) in the hot fat. Add celery and onions and cook 2 or 3 minutes longer or until slightly softened. Add salt and the boiling water; cover, and simmer 15 to 20 minutes. Add molasses, soy sauce and corn starch which has been blended until smooth with ½ cup water. Cook until mixture boils, stirring constantly, then add drained chop suey vegetables and continue cooking until thoroughly heated. Serve with hot fluffy rice and additional soy sauce if desired. 5 servings.
