Shredded Carrot Salad

From The Modern Family Cookbook

5 medium-size carrots
1/2 green pepper
1/3 cup mayonnaise
1 teaspoon sugar
Dash of salt
Crisp Lettuce

Wash, scrape and shred carrots corsely by rubbing in shredder only in onoe direction. Then shred green pepper in same way. Combine carrots and pepper lightly with mayonnaise, sugar and salt. Heap lightly on lettuce on individual salad plates. Chill before serving. 5 servings.

Shredded Carrot and Raisin Salad

Add 1/2 cup raisins, which have been plumped to the carrot mixture for Shredded Carrot Salad. Omit the green pepper. 5 servings.
