Rice Cream

From The Modern Family Cookbook
½ cup rice
1²â„³ cups evaporated milk
1 cup water
½ teaspoon salt
¼ cup granulated sugar
1 teaspoon vanilla
¼ cup brown sugar, packed firmly
¼ teaspoon cinnamon

Wash rice and add to 1 cup of the evaporated milk, water and salt. Cover and cook over boiling water 1 hour and 10 minutes or until the rice is tender. Stir frequently. Now remove from heat, add granulated sugar and chill thoroughly. Then beat in vanilla, brown sugar and cinnamon with a fork. Have remaining evaporated milk thoroughly chilled. Whip the milk until stiff. Fold into rice mixture thoroughly. Again chill, then serve. 5 servings.

Note: Just before rice is done, if desired, stir in well 1 or 2 well-beaten egg yolks.
