Escalloped Cabbage

From The Modern Family Cookbook

2 to 2½ lb. head cabbage
2 cups thin white sauce
½ green pepper, chopped
1 cup grated sharp cheese
½ cup buttered crumbs
3 slices half-cooked bacon

Cut trimmed cabbage into eighths, remove core and cook, uncovered, for 8 minutes in boiling salted water, 1 teaspoon salt to 1 quart water. Then drain. Place a layer of cabbage in a buttered baking dish or casserole, then a layer of white sauce, half the green pepper and half the cheese. Repeat. Sprinkle top with buttered crumbs and chopped bacon and bake in a moderate oven (375° F.) until toasted, about 15 minutes. Serve immediately. 5 servings.
