American Fried Potatoes
From The Modern Family Cookbook
Thinly pare 5 or 6 firm boiling potatoes and slice thin. Melt 2 to 3 tablespoons shortening in a heavy skillet. When fat is hot, lay in the sliced potatoes, sprinkle with salt, cover skillet and cook slowly. When under side is beautifully browned, in about 10 minutes, turn potatoes carefully with pancake turner; cover; and continue cooking 10 to 15 minutes longer, until potatoes are tender in center and crisp on bottom. 5 servings.

I think you meant to say “thin”, slice thin right?

I LOVE fried potatoes but alas, they’re not very good for you are they? ;o).
