Raw Cauliflower Salad

1 small head cauliflower

â…” cup French dressing

¼ lb. grated sharp cheese

1 small head of lettuce

Soak cauliflower in cold salted water for 1 hour. Wash, separate into flowerets, slice large flowerets into thin fan-shaped pieces, and marinate in French dressing for an hour or more, in a covered bowl in the refrigerator. Then drain and add grated cheese and toss to mix. Serve chilled in lettuce cups. 5 servings.
