Chicken Salad Balls
From Southern Living: Our Best Recipes. Volume 3, 1978.
1 cup cooked chicken
1 tablespoon chopped onion
2 tablespoons chopped pimiento
dash of hot sauce
1/2 cup salad dressing or mayonnaise*
1 cup chopped pecans
*the cookbook actually has a typo here that says manonnaise…maybe because they are balls? I don’t think I would use this much mayo.
Combine all ingredients, mixing well; chill several hours. Shape into 1-inch balls. Yield: about 2 dozen.
For a another interesting chicken balls recipe, though I don’t know if it qualifies as retro at all, and it isn’t chicken salad balled up see the Hot Chicken Balls Salad recipe.

hot chicken balls salad? I’d never eat, but I sure like the way it sounds

Sounds good up until the hot sauce.

With just dash, I am thinking that it truly doesn’t add anything to the recipe that would be on the spicy side, but rather just the dash of hot pepper sauce to make it a southern recipe.
