Olive Egg Sandwiches

3 hard-cooked eggs

1/4 cup chopped stuffed olives

1/3 cup mayonnaise

10 slices buttered bread

5 leaves lettuce

Shell eggs and chop quite fine. combine with olives and mayonnaise. Spread on 5 of the bread slice, cover each with a lettuce leaf, and lay another slice of bread on top. Cut each sandwich in 4 triangles. 5 sandwiches.

My Notes Obviously these are not going to be thick sandwiches.That also seems like more than enough mayo to make for an extremely greasy egg salad EVEN before the oddity of buttering the bread too.

  1. My husband butters (or rather has me butter) all the bread for his sandwiches, whether they be roast beef or egg salad or whatever. Ergh.

  4. No, no olive and egg penguins, though they are darn cute. Maybe I should try that to raise the profile of hard-boiled eggs in this house. I am sure I have nothing better to do than pin olives on eggs. ;-)

  5. Same recipe as my grandma’s but it calls for 8 eggs not 3, probably looks like a 3 if it was handwritten
