If you ask me about egg salad, I am likely to tell you one of two stories. One is that my favorite egg salad in the world was made by the Hospital Auxillary Pink Ladies and served in the Anne Arundel County General Hospital gift shop (not the cafeteria). I have never been able to successfully duplicate it. Very simple, very plain, but perfect.
The other is this: one Easter, maybe more than one Easter, my mother used dyed hard-boiled eggs and a can of potted meat to make egg salad. I am sure she added pickle relish, maybe a smidge of mustard and of course, mayonaise. I instantly felt revulsion for this mixture. Why ruin good hard-boiled eggs like that? Plain hard-boiled eggs worked for me. Egg salad worked for me. But potted meat egg salad? Ummm no….but then the bite..the taste….mmmmmmmmmmmmmm…amazing.
Really. I can’t explain it. Quite tasty.
Tell me about your favorite egg salad. Pickles? No pickles? celery? celery salt? mustard? dry mustard?

I really didn’t used to like egg salad but once when helping someone move all there was to eat was egg salad sandwiches. I learned to like it in a hurry (it was an 8 hour move).
I like it with pickles. Celery preferred over celery salt (but if I don’t have celery I’ll use celery seed). Definately dry mustard.
OMG that’s horrible. I think you witheld that info from me because you knew I would never consent to live with you if I had known.

I think I’ve got about 5 working Egg Salad recipes right now. I love Egg Salad and am always looking for a new combination. Just the highlights of my favorites:
- Classic Egg Salad with celery, red onion, and more.
- Curried Egg Salad with cheddar,green onion, curry, etc.
- Bacon Egg Salad with (of course) bacon and tabasco!
- Caraway Egg Salad with the seeds and horseradish, etc.
- Cucumber Egg Salad with mint and thinly sliced cucumber, with white pepper and rice vinegar.
Tell me more about the curried egg salad. I like curried eggs a lot!
