Hot and Heavy Hashbrowns

Mushroom Pyrex This one could qualify under quasi-retro recipe standards. Casseroles always have a retro feel to them even when brand new. If you must have a really light version…Elaine Magee offers this Light Hash Brown casserole for your celebration. I am sure it is tasty and delicious, the following recipe is not light at all…thus the name.
Hot and Heavy Hashbrowns

Preheat oven to 350. Spray 9×13 pan with cooking spray. (optional)

Mix together in pan (Saves a clean up step…always important when you are trying to romance someone put off by dirty dishes.):

1 can Cream of Mushroom Soup

1 cup sour cream

1 2 oz jar of chopped pimentos (drained)

1/2 tsp minced garlic (I use the kind from the jar)

salt and pepper to taste

Add

2 cups shredded cheddar cheese

1 cup parmesan cheese

Stir.

1 lb bag shredded potatoes. (Simply Potatoes or similar)

Add potatoes and mix well.

Smooth potato mixture in pan; you know it is all one lumpy mess with all that mixing in the pan. Distribute it evenly throughout the pan.

Throw massive amounts of shredded cheddar on top. (errr…I mean sprinkle cheddar cheese on top). Bake for about 45 minutes.
